The traditional method of pressing has generally been replaced by extraction, and most oils are extracted cold. These are the terms we now see most frequently on olive oil labels. The International Olive Council does not prescribe a particular mention to this effect so you might only see the words “extra virgin.” Producers are free to mention their method of production on the label if they so choose.
